Mmmm! Gooey, warm, caramel covered pecans. This easy, indulgent dessert topper is delicious on ice cream, this Pumpkin Cheesecake, a simple chocolate cake, an apple tart or any other dessert that needs a little dressing up.
Pecan Caramel Topping
Servings: 8-10
Prep time: 15 minutes
Cooking Time: about 15 minutes
2 cups (200 g/8 ounces) pecans
1 stick (125 g) unsalted butter
¾ cup (125 g) brown sugar (light or dark)
½ cup (120 ml) heavy cream
½ teaspoon salt
Preheat the oven to 350° F (175° C). Spread the pecans on a baking sheet and toast until fragrant, about 7 minutes. Let cool then break them into pieces.
In a medium saucepan, cook the butter and brown sugar over medium heat and stir until smooth. Stir in the heavy cream and salt and bring to a boil. Lower the heat and let simmer until slightly thickened, about 5 minutes. Let the caramel cool then add the pecan pieces. Stir gently and serve on your favorite dessert. The pecan caramel topping can be made ahead and refrigerated for up to 5 days – simply reheat in the microwave before serving.
